Higher levels of uric acid in the blood, results in its crystallization, and this crystallized form get deposited near the joints and tissues. This medical condition is termed Gout and is quite prevalent among older men. The crystallized form of uric acid may also be present in the kidney stone. Symptoms of gout are redness, swelling and pain around the joints. Gouts can also affect knees, fingers and wrists. Hyperuricemia is the condition leading to gout.

 

Precaution and Prevention:

Numerous studies indicate that a diet low in Purine significantly reduces the risk of gout. Purine rich food is responsible for an increased level of uric acid in the body as, after metabolism of purines uric acid is left behind. Hence lowering of Purine in the diet helps lowers the uric acid content in the body hence avoiding crystal formation.

 

What is Purine?

Purine is present in all food substances and forms a basic chemical element in the structure of genes.  It is an organic base rich in nitrogen. Purine rich foods are also high in proteins.

Purine content in food

Food high in Purine: It is high in meat and meat products like beef, pork, brain, and kidney and liver. Certain seafood is also high in purine. Alcohol and bread also have high purine content. Substances high in protein and yeast have high purine content in them. While following a low purine diet, the consumption of these items should be kept at a minimum.

 

Food containing moderate to low levels of purine: Green leafy vegetables and fruits (and their juices), dairy products (milk, cheese, yoghurt etc.) nuts. Food items low in protein and yeast can also be consumed.

 

Purines are essential in our diet as they help in the structuring of our genes. However due to old age or any other reasons (heredity, low rate of metabolism), purines may give rise to gout. As seen in the above purine rich food, non- vegetarians are most likely to suffer from gouts. The perfect way to consume purine rich food is through proper cooking. If these high content purine food are properly boiled then the ablility of the body to absorb and excrete these are enhanced. However if the water used for boiling still contains the dissolved purine content and if not discarded, can increase the purine content consumed. A person suffering from gout has to consult a proper dietician before starting the low purine diet. Most probably the dietician would recommend a reduction in meat consumption and protein rich food. Certain vegetables should also be avoided, like peas and spinach (however these can be consumed in small proportions). However when consulting a dietician, make sure you understand the cooking techniques that can be followed to remove purines from the cooked food. People suffering from gout or having a family history our joint inflammation should stay clear of low carb diet, as these increases the intake of proteins. Mild exercises and certain medications are also available to control gout and negate the effect of high purine.
